Zobo Spritzer

The Zobo Spritzer is proof that something beautiful does not have to be complicated. Cofa Juice Original - bold, tart, deeply red - poured over ice with a gentle layer of prosecco or elderflower sparkling water on top, jewelled with frozen raspberries and a sprig of rosemary that perfumes the glass as you drink. It works with alcohol (prosecco is the choice for a celebration) or without (elderflower sparkling makes it a stunning all-day, all-ages option). Either way, the colour alone makes it a talking point. This is the spritzer to make when you want to impress without any effort at all.

Ingredients

Method

  1. Place your glass (a wide wine glass or coupe works beautifully here) in the fridge or freezer for 5–10 minutes to chill. A chilled glass keeps the spritzer colder and maintains finer bubbles for longer.
  2. Remove the glass and fill it generously with ice cubes.
  3. Drop a small handful of frozen raspberries over the ice. They'll keep the drink cold and slowly bleed a little of their colour as the drink is consumed - a lovely effect.
  4. Pour in the 100ml of Cofa Juice Original over the ice and raspberries.
  5. Top up slowly and carefully with the prosecco or elderflower sparkling water, pouring it down the inside edge of the glass to preserve as many bubbles as possible. Avoid pouring directly onto the ice.
  6. Tuck a fresh rosemary sprig into the glass alongside the ice. The sprig will release its herbal fragrance as you hold and sip, adding an aromatic dimension that surprises and delights. Serve immediately.

Tips

Make it a party pitcher. Multiply by 6–8, combine everything except the sparkling in a large jug, refrigerate until guests arrive, then pour into individual glasses and top each one with a splash of prosecco or elderflower sparkling. This way the bubbles stay fresh in every glass.
Elderflower is the secret weapon. If you're making the non-alcoholic version, use a good quality elderflower sparkling water rather than plain sparkling. The floral sweetness bridges the tartness of the hibiscus in a way that feels genuinely sophisticated.
Fresh rosemary only. Dried rosemary does not work here - you need the natural oils of a fresh sprig. If you don't have rosemary, a fresh thyme sprig is a beautiful alternative with a similar herbal character.
